  • 1 big onion
  • ¾ tsp salt
  • 1 sprig curry leaves
  • ¼ tsp turmeric powder
  • ¾ tsp black pepper powder

Recipe to make Muttai poriyal:

  • Heat oil in a pan, add mustard seeds and cumin seeds.
  • Let the mustard splutter in hot oil, add gram dal and urad dal. Fry them to golden brown color and add chopped chillies.
  • Put chopped onions and required salt for the eggs.
  • Add curry leaves and turmeric powder.
  • Now pour the beaten eggs and start mixing.
  • Stir and mix quickly and continuously.
  • Eggs tend to cook fast in just five to eight minutes. Cooking eggs in a flat pan is always a good choice.
  • Stir well without break, scrap the sides of the pan and mix well.
  • Soon the eggs become solid and start leaving the pan.
  • Continue to cook for total ten minutes if using five or six eggs.
  • Finally add a lavish quantity of black pepper powder, mix and switch off.
  • Serve hot as a filling breakfast or as a side dish during lunch or dinner.

Notes

Tips: 1) Instead of green chillies, use only pepper powder while making for very young kids.
