Ingredients

  • cup Ragi flour (Kelvaragu)
  • ¼ cup water (approx.)
  • ¾ tsp salt
  • 1 cup grated coconut
  • ½ cup sugar/brown sugar/jaggery
  • ½ tsp cardamom powder
  • 1 tsp ghee

Instructions
 

Recipe to make Kelvaragu puttu:

  • In a bowl take ragi flour, add some salt. I used already roasted flour. You can dry-fry the ragi flour if it is too raw and store bought. Alternately you can use the store bought puttu flour directly.
  • Gradually sprinkle water and start mixing with flour. Do not pour water as you may end up with large lumped flour mix.
  • Just make the flour moisture. The texture of the flour should be in such a way that, if you hold the flour it should hold shape for a few seconds.

How to steam puttu flour:

  • Spread the moisture flour in wet cotton clothes and cover the cloth like this.
  • Steam boil using electric cooker or Idly cooker for full 12 minutes.

How to mix the sweet puttu:

  • Take the steamed ragi flour in a mixing bowl and add grated fresh coconut with a pinch of salt.
  • Add sugar or brown sugar or jaggery powder.
  • Also, add cardamom powder and ghee.
  • Now combine everything with a spoon or fingers thoroughly.
  • Ideally, if you have mixed water with ragi flour properly, then the steamed puttu would not have any big lumps.
  • In case if you find lumps, just break with fingers.
  • Alternately, you can use a blender to give a quick stir to break the lumps if any.
  • Serve with a banana for a better combination.

Notes

Tips: 1) As plain ragi flour gives the desired results, I never use puttu flour for this sweet puttu recipe. You can use puttu flour also for this same recipe. 2) Use only fresh coconut for making puttu and dried/desiccated coconut may not give a better taste. 3) In order to make it a complete healthy breakfast/ snack for kids or adults, use brown sugar or jaggery powder instead of white sugar.
